It has appeared that to change bubbles design in SMS messages is very very simply, for this purpose you will need to replace just 2 files in a folder /Applications/MobileSMS.app. You can make using any iPhone file manager.

Balloon_1.png - incoming SMS
Balloon_2.png - outgoing SMS&nbsp

This archive has few designs of bubbles. Choose your favorite and replace with it a standard file.
